Farm to Fermenter is a brand new series for Vault City, who are really lucky to be slap bang in the middle of Scotlands soft fruit county. Scotland is prolific with soft fruit and in particular berry growing, so the guys want to celebrate that with the farm to fermenter series. This ambitious new series is about getting one step closer to the roots of these fruits and bringing them from field to fermentation in 24 hours.
First up is the mighty Scottish Raspberry. The Vault City house mixed culture’s hot fermentation gives a delicate lemon like acidity and the resulting base beer is a perfect platform for the tart raspberries to shine.
